The unexpected addition of dates, a California twist to this classic southern pie, gives the filling a fuller flavor and more interesting texture than most of the sticky or gummy pecan pies I have tasted, which often taste more like sugar or corn syrup than anything else. I use Lyle’s Golden Syrup instead of corn syrup for its mellow flavor that plays nicely with the rich flavor and crunch of the pecans.
A portion of whole wheat pastry flour in the crisp and flaky crust adds a nuttiness and contributes to the depth of flavor in the wonderful pie, a signature item of milkglass.
