WEDDING CAKE with Dark Chocolate Ganache with Pomegranate Filling

One of our signatures is chocolate-covered wedding cakes. This stark and beautiful dark chocolate wedding cake was made for a November wedding in the Santa Cruz mountains, so pine cones served to decorate the cake with inspiration from the gorgeous redwoods surrounding the site. 

Flavors for top and bottom tiers: Milkglass’ favorite chocolate cake, a tender sour cream devil’s food cake, filled with a malted chocolate mousse buttercream.

Flavors for middle tier: Tender yellow cake filled with mousse-like buttercream infused with fresh raspberries and pomegranate juice. Served with fresh raspberry sauce.

The whole cake is covered in a ganache frosting (organic heavy cream, chopped Vahlrona semisweet chocolate, and a whisper of cognac) and a stunning shiny dark chocolate glaze (shiny as a baby grand piano!), elevating this cake to gorgeous status with no gummy fondant to be seen.
